The beans undergo a fermentation process of 5 to 6 days in eucalyptus wood boxes, followed by sun drying on raised racks for 6 to 7 days. What sets this chocolate apart is its vivid and vibrant fruitiness, which bursts forth with cherry like intensity, almost reaching a delightful
